What To Eat And Drink At Draughtsman
Less than a year after helping to jump start the revitalization of North Palm Springs, ARRIVE Hotels & Restaurants has opened Draughtsman, a restaurant offering a menu of modern comfort food and pub classics that's located adjacent to their 32-room boutique hotel.
The name Draughtsman (or draftsman) is a play on the double meaning of the word: An architect or, when used in reference to hospitality, a person who practices or is qualified in serving beverages, typically beer.
Designer Chris Pardo's transformation of a space that formerly housed a Pizza Hut pays homage to the spirit of Palm Springs architecture with soaring wood beam ceilings and an indoor/outdoor flow with roll-up garage doors that open to a patio that wraps around three sides of the restaurant. And draftsman elements are cleverly employed throughout the space—for example, a display case near the entrance is filled with architect's drawing compasses, and the men's room has blueprint-like drawings for the original toilet paper roll, toilet seat and cover, and a water closet along with the inventors' names.
When it comes to the hospitality side of things, Chad Austin, the restaurant's "cocktail architect” has created some amazing cocktails with beer syrups and IPA foams.
"Beer cocktails are great, but I think it's better to tell you a little bit about our cocktail program in which the beers were manipulated to provide something a little more intriguing," he says. "First, and I would call this the Signature drink, is the Old Draughtsmen: Jameson Caskmates Irish whiskey, Guinness syrup, toasted pecan bitters, with a lemon twist. It’s a play on an Old Fashioned with a few more earthy and malty notes and hints of coffee, chocolate, and a slight nutty flavor on the back end."
Or you could try the Ionic Order: Tequila Cabeza, Primary Mezcal, Yellow Chartreuse, pink peppercorn hibiscus syrup, lime, and IPA foam. "It’s a beautiful, easy-drinking, refreshing cocktail with a lot of flavor," says Austin. "As the IPA foam melts it creates a sunrise effect on the cocktail and if mixed in it can provide a second flavor experience in the same drink. While the foam is still resting atop, though, it provides a wonderful aromatic that complements the hibiscus.”
As for the food, we challenged Chef Carmen Rodriguez—who also oversees the menu at the hotel's restaurant, Reservoir—to pick out some of his favorite dishes.
"Wow, this is going to be hard," says Rodriguez. "It’s like having an all-star team of premier athletes and trying to pick out the one you like the best. But . . . my Top 10, in order of my favorites are:

3) Baja Veggie [a black bean burger]
4) Draughtsman Burger
5) Vegan Red Lentil Penne
6) Seared Butter Fish
